Description: The first part of this intensive one-day workshop will focus on the preparation of cakes for carving; cutting into cakes without fear of making mistakes and proper carving skills, and techniques to ensure internal stability. The second part will focus on elements of design and how to recreate life-like looking fondant covered sculptural cakes. We encourage students to bring their carving and design questions to class for problem-solving discussion. Each student will bring in a filled cake in their choice of shape to practice their carving skills and work with Isabelle to discuss design and decorating technique.

Description: Defy gravity!  This advanced class builds on the skills learned in W1 – The Art of Sculpted Cakes.  You’ve seen them do on television, now learn how to design and build your own 3 dimensional standing cake.  In this class, we’ll do an in-depth study of internal structure and the use of pipes, boards and various edible materials to accomplish gravity defying pieces of work.  We’ll even talk about power tools!

Day 1:  The first day of class will cover planning and building the internal structures for various projects.  We’ll use pipes to build the skeleton of your own 3 dimensional Raggedy Ann and will explore the use of modeling chocolate and rice cereal treats.  Students will carve and prep cake for day 2.  It’ll be a busy day!

Day 2:  Don’t fear the fondant!  On day 2, we’ll work on assembling, covering and decorating Raggedy Ann.  You’ll learn troubleshooting techniques that you can use in all your cake decorating projects.  Students will go home with their own Raggedy Ann cake standing approximately 19” tall.

Prerequisite: W1: The Art of Scuplted Cakes or equivalent. Fondant experience a must.

Description: Bring out your inner artist!  Learn how to adapt this ancient art form and add intrigue to your celebration cakes, wedding cakes and cookies.

Each student will learn how to plan, draw and transfer a pattern onto their cakes.  The beautiful mosaic designs will then be created using various types of edible tiles that you will make in class.

Once your masterpiece is “grouted”, you will be amazed by your artful creation…even if you cannot draw!
