Description: Learn how to create signature cakes from the inside out! Designed specifically for fondant covered cakes; this workshop will take you through the creative process step by step from learning correct preserving techniques to the many ways preserved fruit can be used to create delicious one of a kind signature cakes. These techniques can be used for cupcakes and mini cakes as well.
Learn to incorporate fruit into cake baking - fresh coconut cake, banana yogout cake, carrot cake and apricot pistachio cake. Cakes (as well as a few cakes from B1) are then filled using the fillings made in class. The cakes will be tasted in class with a sample for students to take home as well samples of the preserves made in class.
Preserving: Learn how to create and preserve your own signature fruit fillings from both seasonal and frozen fruit. Correct preserving techniques will be taught to create jams, compotes, candied peel and other delectable treats.
Creating Signature Fillings: Learn how to incorporate preserved fruit with buttercream, chocolate ganache and liqueurs to create delectable cake fillings that will allow you expand your repertoire to offer your clients and guests a unique flavour experience.

Description: This class will give students the confidence to begin exploring the vast world of French Pastries!
In this 2 day hands-on course , students will learn some of the classic recipes and techniques used in making French Pastries. During this workshop, students will work in small groups to prepare a basic repertoire of recipes. Students will then learn to use each recipe to its full potential; combining rich vanilla cream (creme chiboust) with crispy puff pastry (feuilletage) to make delicious napoleans, or buttery tart dough (pate sucree) with almond cream (creme d'amandes) to make apple and frangipane tarts.
Day 1: Learn to make essential doughs and batters including; tender, buttery tart dough (pate sucre), puff pastry (pate feuilletee), golden shells for chocolate eclairs (choux paste).
Day 2: Learn the basics of creating delicious fillings and creams such as: Almond Cream Filling (creme d'amandes) and Rich Vanilla Cream (creme chiboust). Learn about finishes and composition by assembling their components into delectable French pastries. All students will take home a sampling of the dishes they have created in the class.

Description: In this two day workshop, students will how learn to make a variety of small treats suited for many different occasions such as wedding favours, sweets tables and packaged gifts – just in time for the holiday season! Students will learn to make delicious sweets like classic French macaroons, flavoured guimauve (marshmallows), chocolate cannelle (crisp custard treats), lemon madeleine and honey cashew caramels.
Day 1: Students will learn fundamental techniques required to create
delicate French macaroons, delectable guimauve (hand crafted marshmallows) and
mouthwatering caramels.
Day 2: Students will assemble and complete macaroons, cut and finish guimauve and caramels as well as bake cannelles and madelaines. Once finished, students will learn the best ways to package and store their treats and take home a delicious sampling of their work.

Cancellation Policy: Full payment is required at the time of booking for all classes. If paying by cheque, it must be received two weeks prior to the start of the first class. Students are responsible for ensuring there are no scheduling conflicts when enrolling in two or more classes. If you do not attend the class you are registered for, your payment will be forfeited. 7 days notice is required for class cancellations upon which a credit note will be issued and may be applied to future classes within a 6 month period. We do not provide makeup classes for missed sessions. Should a class be cancelled a full refund will be offered.
