BE3: PROFESSIONAL PORTFOLIOS

BE3The old cliché is true: a picture is worth a thousand words. If you want to get professional prices for your cakes, a portfolio containing high-quality images that show off your work efficiently is essential. In this 5 hour seminar and demonstration, you will be guided through how to get the best out of your cakes through a good portfolio with quality photography. Some of the subjects covered will include;

  • Introduction to using your camera to take better pictures within a budget. (Bring your camera and camera handbook. Please DO NOT BUY a camera for this part; you may want to after this class).
  • Split into 2 teams and all team-members' cakes (1 per member) will get photographed by the team.
  • Introduction to downloading images and creating on-line photo books of cakes.
  • Each team will create a photo-book with images from the morning exercise.

BE4: INSURING YOUR BUSINESS

We have added two new baking classes at the school. Our baking teachers, Michael Smith & Charmaine Baan have developed these hands-on classes for those of you who want to learn the fundamentals of baking and to expand your repertoire of signature cakes.

B2: INTRODUCTION TO BAKING

B2Do you want to learn how to bake scrumptious homestyle cakes from scratch? Have you ever wondered about oven temperature, unevenly baked cake layers, burnt tops and raw cake interiors? Do you have a fear of baking? Fear no more! This introduction to the fundamentals of cake baking will start you on your way to preparing delicious cakes from scratch using quality ingredients.

Learn how to create signature cakes from the inside out! Designed specifically for fondant covered cakes; this workshop will take you through the creative process step by step from learning correct preserving techniques to the many ways preserved fruit can be used to create delicious one of a kind signature cakes. These techniques can be used for cupcakes and mini cakes as well.

We welcome two talented artists to the Bonnie Gordon School Creative Team! Sally Bratt brings over 25 yrs of experience spent studying and drawing animals and the human form and has created 2 new Figure Modelling classes in which you'll learn how to make adorable cake toppers!

For many years Ava Roth has worked as an artist in a variety of mediums, including painting with gouche and embroidering on paper. She has always loved fine and ornate work, and is delighted to share her talent with you in her new Painting on Cakes class.

FIGURE MODELLING CLASSES

S2: Introduction to Figure Modelling: If you've ever wished you could create little gumpaste cake toppers but thought you weren't 'artistic' enough then this class is for you. This hands on 3.5 hour Introduction to Figure Modelling class will teach you, step by step, how to create whimsical 3D animals.

You will learn to make an adorable gumpaste puppy which can easily be transformed into many other animals.

S3: Intermediate Figure Modelling: We will discuss basic human proportions and you will begin work on your human figure. You will work on clothing for your human figure, applying hair and doing the final assembly.

The skills you will learn in Intermediate Figure Modelling will give you the confidence to continue on your own to create a wide variety of figures.

S5: PAINTING ON CAKES

S5

This class is designed to introduce both beginners and accomplished painters to the art of painting on cakes. Whether cake designers make use of these skills to add dimension to small details or to paint an entire cake, this hands-on class will demonstrate how to transform cakes into beautiful and unique works of art. Topics covered include how to mix colours and turn food colour into “paint”, how to create homemade cake stencils, techniques for transferring images onto fondant, how to paint large sections of fondant, and how to use paint to make small details really pop. Tips for designing a painted cake will be explored, and several beautiful painting techniques will be demonstrated, such as painting a cloisinee effect, free-hand painting, painting on piping and painting trim borders.
