2009 has come and gone in the blink of an eye and 2010 is the year for all things new at the Bonnie Gordon School. 

With a brand new state-of-the art kitchen located on the main floor, we are able to provide our students with a fabulous facility to learn how to make the latest trendy confectionary treats in our Baking and French Pastries classes. This, along with the launch of many brand new classes are even more reasons for all of our students (past and new) to visit the school.

But beyond these new additions, our goal this year is to build a strong community of cake enthusiasts. In a few months, we will be putting on our 2nd annual Cake Show, an incredible opportunity for current students and alumni to showcase their talent in cake design and sweet treats. We hope to see you all at Wychwood Barns on April 25th to take in some of the beautiful cake art and much more!

CHOCOLATE DELIGHT!

Art of Chocolate Level 1

During this two-day introductory course, students will discover the origins of chocolate, participate in a tasting of world chocolates and learn the various tempering techniques required to achieve the perfect chocolate confections. Under the guidance of pastry chef Isabelle Loiacono (a graduate of Le Cordon Blue), students will learn proper tempering techniques, make rich and creamy ganaches for truffles, use cutting-edge techniques to decorate and finish truffles and so much more. Class will finish with a demonstration on how to create your own chocolate showpiece.

Exploring World Techniques: Australia

Have you ever wondered how Australian cake designers create gorgeous and delicious fondant covered cakes that require no refrigeration? Well we have the answer! During this one day hands-on class you will learn how to perfectly bake both dark and white chocolate Australian "mud cakes"; discover the secrets behind properly preparing, filling and masking your cakes with high quality ganache and discover how to achieve a smooth surface ready to be covered with fondant. These cakes do not require refrigeration and offer you days of worry-free design time!

Creative Techniques with Compound Chocolate

Join us for this fun and colourful workshop and explore the creative possibilities of compound chocolate. Divided as a two-part class, students will spend the morning learning proper illustrating techniques with the use of chocolate while the afternoon will be spent creating a chocolate smash cake where students will learn how to properly colour compound chocolate, how to create fun chocolate illustrations, and how to create a chocolate-based Piñtas.

Jaclyn Douglas

We are thrilled to welcome Jaclyn Douglas as the most recent addition to The Bonnie Gordon School Creative Team! She teaches a wide range of classes at the school and our students love studying with her due to her considerable knowledge, patience and thoroughness. Her classes include; DC1: Introduction to Cake Decorating, DC2: Intermediate Cake Decorating & Design, D2: Designer Cookies, D3: Mini Cakes & W3: Creative Techniques with Compound Chocolate. Jaclyn also has some exciting new classes under development.

Jaclyn first came into cake design when she decided not to return to work after having her second child.  She was eager to hone her creative passions.  She started to take part time courses, which lead her into an internship at the Bonnie Gordon School.  She is eager to teach other entrepreneurs and hobbyists alike techniques that she has learned throughout her career.

Cupcake Bouquets


At the Bonnie Gordon School, it is our mission to offer students not only the fundamentals in baking and design but all the tricks of the trade to creating trendy new confectionary treats in the market today. Here is a brand new cupcake class that will keep you ahead of the game:

Some people considered cupcakes to be a fad but their popularity and their demand continues to grow with cupcake shops popping up all over the city.  Along with our updated Cupcake Couture class, we are also introducing our new Cupcake Bouquet class.

In this fun workshop, students will learn how to pipe a variety of flowers on ready baked cupcakes and assemble them into a unique and stunning edible bouquet arrangement - the perfect hostess gift!
